Robert Marchetti of Sydney restaurants Icebergs Dining Room and bar, North Bondi Italian Food & Giuseppe Arnaldo and Sons in Melbourne has produced these old school style salumi in partnership with Peter Andrews.
Made by Papa Rodolfo from 100% Black Berkshire Pigs with traditional spices and curing techniques. These products are gluten and phosphate free with no artificial preservatives or artificial ingredients. Only things we all love, real food. The Papa Rodolfo Family hand selects all the pigs from a small selection of free -range farms. The salumi is made at their property near Lismore Coast, New South Wales. Berkshire pork has a rich sweet flavour with a good dispersion of intramuscular fat making the meat tender and juicy. These pigs are slow growing leading to a rich colour, good levels of back fat and superior quality meat.
