with white wine, fennel, garlic & chilli

2014 Block 1 Forest Hill Riesling available from the Wine Loft 

70g unsalted butter
1 medium onion, finely diced
1 fennel bulb cut in half, core removed and thinly sliced
2 cloves of garlic, finely chopped
1 red chilli, seed removed and finely chopped
12 cherry Roma tomatoes, halves
1kg of Boatshed Goolwa Pipis, rinsed well
200ml of Riesling or dry white wine
1 small bunch of Italian parsley, shredded (stalks included)
1 lemon, cut into wedges

1. Melt butter in a large pot over medium heat
2. Add onion, garlic, fennel, chilli and cook gently for 5 minutes
3. Add wine, reduce by half
4. Add pipis and cherry tomatoes and turn up the heat. Cover and cook for 4-5 minutes until Pipis have opened.
5. Stir through parsley, add a twist of black pepper
6. Serve with lemon wedges, hot Boatshed garlic bread and a glass of
