We have received spectacular Southern Bluefin Tuna, wild-caught 200 nautical miles south of Rottnest Island and dry-aged for 10 days in our dedicated Fishco dry-ageing room. Sourced from the cool Southern waters off Western Australia, this exceptional tuna develops remarkable marbling and the rich, buttery texture prized in premium sashimi-grade fish. Inspired by Japanese tradition, the dry-ageing process intensifies flavour and creates an unforgettable melt-in-your-mouth experience. Enjoy as premium tuna steaks cut from the loin or expertly prepared by our Japanese chefs as exquisite dry-aged sashimi with our house-made ponzu sauce.
